White Dog Bistro in Culinary Challenge

The White Dog Bistro in downtown Mathews is one of the Final Four in the Virginia is For Lovers Culinary Challenge sponsored by the state tourism division.

The restaurant’s Island Clams Espagnole earned 1380 votes from residents in the statewide online voting contest. Owner Mac Casale described it as a spicy clams dish with chorizo sausage, demi-glace and a Port wine reduction. Walter Wilkes is the bistro’s executive chef.

The dish will go up against dishes created by Comfort in Richmond, Horseshoe Restaurant in South Hill and Foode in Fredericksburg at a cooking contest Monday in Richmond. Statewide voting for the Final Four begins Wednesday March 25.

Casale and his wife, JC, have operated the bistro for three years. The 1840 building is open for dinner Thursdays through Sundays.
